A native of New Orleans LA., at a very young age Chef Scales began to understand the art of cooking while working at various food service establishments. He worked with his mother and aunt as a dishwasher where he started working throughout the French Quarters/Bourbon Street. Scales is a graduate of Nicholls State University where he received a degree in Hotel and Restaurant Management/Food and Beverage Management, He also attended Delgado Community College receiving a degree in Culinary Arts. After graduating, he worked as a line cook, saucier, Lead Cook, Sous Chef and Executive Chef. During this time he also received a degree at Union Baptist Theological Seminary of New Orleans La. In 2005, he moved to Texas where he worked at various food service establishments, as an area Food Service Director/Chef. In 2015 Chef Scales and his wife Larissa started a small catering service which eventually tied into Scales Cuisine/Scales Café in McDade, TX. Chef Scales takes pride in his work and is determined that each customer has an outstanding experience!
